Cream Cabbage Casserole

  • 1 medium cabbage, coarsely chopped
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 1/3 c. toasted bread crumbs
  • 2 Tbsp. melted butter
  • 2 Tbsp. butter
  • 1/4 c. all-purpose flour
  • 1 c. whipping cream
  • 1/4 tsp. pepper
  • 1/4 c. grated Parmesan or Cheddar cheese

Directions

    Cook cabbage, covered, 10 minutes in a small amount of boiling salted water.

    Drain well and set aside.

    Melt 3 tablespoons butter in a heavy saucepan over low heat; add flour, stirring until smooth.

    Cook 1 minute, stirring constantly.

    Gradually add milk and whipping cream; cook over medium heat, stirring constantly until thickened and bubbly.

    Stir in salt, pepper and nutmeg.

    Add cabbage to white sauce, mixing well.

    Spoon into buttered 1 1/2-quart casserole.

    Sprinkle with cheese and top with breadcrumbs; drizzle with 2 tablespoons melted butter and bake at 375° for 20 minutes.
