- 2 c. finely sliced celery and leaves
- 1/2 small onion, chopped fine
- 3 Tbsp. butter
- 3 Tbsp. flour
- 3 c. milk
- 1 tsp. salt
- 1/4 tsp. pepper
- chopped parsley
Directions

1Cook celery and onion in 1 cup water until tender.

2Melt butter and spread in flour, then add milk.

3Cook, stirring, until thickened.

4Add cooked celery with liquid.

5Heat gently, then season to taste with salt and pepper.
