- 1 1/4 c. flour, sifted
- 1 Tbsp. baking powder
- 1/2 c. sugar
- 1/4 c. vegetable oil
- 1 (16 oz.) can creamed corn
- 1 c. cornmeal
- 1 tsp. salt
- 1 c. milk
- 2 eggs, beaten
Directions

1Mix together flour, cornmeal, baking powder, salt and sugar in large bowl.

2Stir in milk, oil and eggs, stirring just until moistened.

3Stir in creamed corn.

4Pour into greased muffin pan, filling cups to the brim.

5Bake in 400° oven for 25 minutes or until puffed.

6Let cool 1 minute before turning onto plate.
