Cream Of Vegetable Soup

- 1 medium onion, chopped
- 3/4 c. butter
- 1/2 c. all-purpose flour
- 3 (10 1/2 oz.) cans chicken broth
- 2 c. milk
- 2 c. light cream
- 1 tsp. basil
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 5 c. chopped leftover vegetables, such as broccoli, carrots or cauliflower
Directions

1In a large boiler, saute onion in butter until tender.

2Add flour.

3Cook and stir until bubbly.

4Gradually add broth.

5Cook and stir until thickened, about 5 minutes.

6Stir in the milk, cream, basil, salt and garlic powder.

7Add the vegetables.

8Cook gently until heated through.

9Makes about 3-quarts.
