"Creamed" Corn And Basil

Ingredients

  • 1 cup cornmeal
  • 3 cups water
  • 2 cups corn kernels (fresh or frozen)
  • a small handful of chopped fresh basil
  • 3/4 cup soymilk (maybe even a full cup)
  • 1/3 cup nutritional yeast (and more to top your own serving)
  • salt
  • pepper
  • olive oil

Directions

    1. Boil water, pour cornmeal and a 1/2 tbsp of olive oil. Stir and reduce heat to low once it begins to thicken and bubble (this will happen rather quickly).

    2. Add soy milk, corn kernels, basil, salt and pepper, and nutritional yeast (there should be no water left by this step)

    3. Add more pepper and salt to taste ( i think its best with LOTS of pepper)
