- 4 bacon slices
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 3 tablespoons flour
- 1 1/2 cups milk
- 2 10-ounce packages frozen chopped spinach, thawed, squeezed dry
- 2 tablespoons fresh lemon juice
- 1 teaspoon grated lemon peel
- 1/4 cup grated Parmesan cheese
Directions

1Cook bacon slices in heavy large skillet over medium heat until crisp.

2Transfer to paper towels and drain.

3Crumble bacon and reserve.

4Add onion and garlic to bacon drippings in skillet and saute over medium heat until tender, about 6 minutes.

5Add flour and stir 2 minutes.

6Gradually whisk in milk.

7Increase heat to high and whisk until sauce thickens and boils, about 2 minutes.

8Reduce heat to low.

9Add chopped spinach, lemon juice and lemon peel to skillet and stir until heated through.

10Stir in Parmesan cheese and reserved bacon.
