- 4 pounds of fresh spinach
- 1 small onion, diced
- 4 tablespoons butter
- 1/2 cup sour cream
- 1 pound cream cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Nutmeg
- 1/2 cup bread crumbs
Directions

1Preheat oven to 325 degrees.

2Trim and wash the spinach.

3In a large pot of salted, boiling water add spinach.

4Simmer the spinach, stirring occasionally, for 10 minutes.

5Then drain, refresh, and squeeze dry.

6Saute the onions in the butter until tender.

7Add the cooked spinach, sour cream, cream cheese, grated Parmesan cheese, salt, pepper and nutmeg to taste.

8Transfer mixture to a buttered baking dish.

9Saute 1/2 cup bread crumbs in 2 tablespoons of butter until browned.

10Sprinkle bread crumbs on spinach.

11Put it in the oven and bake for 20 minutes, then serve.
