- 2 shallots, minced
- 2 Tbsp. all-purpose flour
- 1/2 c. milk
- 3 pkg. (10 oz.) frozen spinach, cooked and squeezed dried
- 2 Tbsp. butter
- 1/8 tsp. nutmeg
- 1 pkg. (3 oz.) cream cheese
- 3/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1/4 c. sour cream
Directions

1In medium saucepan, over medium heat, saute shallots in butter 3 minutes or until softened.

2Blend in flour and nutmeg; saute 2 minutes.

3Blend in milk; cook 2 minutes or until very thick, whisking constantly.

4Remove from heat; stir in cream cheese.

5Add spinach and seasoning; mix well.

6Heat until hot.

7Remove from heat; stir in sour cream.

8Makes 6 servings.
