- 2 to 3 Tbsp. finely chopped salt pork
- 1 small onion, finely chopped
- 2 pkg. frozen chopped spinach, squeezed
- 2 Tbsp. butter
- 2 Tbsp. flour
- 3/4 c. milk
- 1/2 c. whipping cream
- 1/2 tsp. salt
- fresh ground pepper
Directions

1Cook salt pork, covered, over medium heat until fat is rendered (6 minutes).

2Add onion.

3Cook until brown, stirring often.

4Stir in spinach until well blended.

5Keep warm.

6Heat butter until melted; add flour.

7Cook 2 minutes, stirring slowly.

8Add milk and cream slowly.

9Heat to a boil, stirring constantly, until thickened.

10Add seasoning and spinach.

11Stir well.

12Heat through. Can make the day before covered airtight.

13Gently reheat on stove top or microwave.
