  • 1 lb. fresh spinach, blanched and chopped
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1/4 c. Guinea hen confit, finely chopped
  • 1 oz. heavy cream
  • salt and pepper

Directions

    In a skillet, heat butter until melted. Add shallots and garlic; saute until soft. Add confit; heat through and add spinach. Saute until hot. Add cream and season with salt and pepper.
