- 1 c. self-rising cornmeal
- 3 eggs
- 1/2 c. oil
- 8 oz. sour cream
- 1 can creamed corn (16 oz.)
Directions

1Preheat oven to 425° and mix all ingredients together.

2Pour enough oil into a 9-inch iron skillet so that the bottom of the skillet is covered.

3Place the oiled skillet in the oven until it is hot enough to sizzle (test by sprinkling a small amount of cornmeal in skillet).

4Pour batter into heated skillet and bake for 15 to 25 minutes, depending on the oven.

5Test center of cornbread with a toothpick to see if it is done.
