  • 1 1/2 lb. ground beef
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 1 can Ro-Tel green chilies and peppers
  • 1 lb. Velveeta cheese
  • 1 (12 oz.) can Pet milk
  • 1 (8 oz.) can tomato sauce
  • 8 to 12 flour tortillas

Directions

    Brown ground beef.

    Add chopped pepper and onion to beef and cook until vegetables are tender.

    Drain grease from meat and add Ro-Tel green chilies and tomato sauce.

    Simmer.

    Cut Velveeta cheese into chunks and melt with the Pet milk.

    Roll the beef mixture in tortillas and secure with toothpick.

    Pour cheese mixture over enchiladas and bake for 10 minutes at 350°.
