Creamy Nut Pasta

  • 1 teaspoon oil
  • 3 ounces pasta
  • 1 tablespoon cream cheese
  • 1 tablespoon yoghurt
  • 2 tablespoons walnuts
  • 1 pinch paprika

Directions

    Half fill a large saucepan with hot, salted water, add the oil, and bring to the boil.

    Throw in the pasta, stir and boil gently for 5-8 minutes until the pasta is cooked al dente, but not soggy.

    Drain the pasta in a colander or sieve.

    Put the cream or curd cheese, yoghurt or cream, and nuts into the pasta saucepan, and stir over a very low heat until it is just beginning to melt.

    Add the pasta to the cream mixture and stir over a low heat until coated with the cheese mixture.

    Season to taste and serve on a warm plate, topped with a shake of paprika.
