  • 1 lb. cream filled vanilla cookies
  • 2 1/2 sticks butter
  • 2 c. powdered sugar
  • 4 eggs
  • 1 can pie filling (raspberry, blueberry, cherry, etc.; I put my fruit, especially cherry, in food processor for a few seconds for a smoother consistency)
  • 2 c. whipping cream

    Melt 1 stick butter; mix with cookie crumbs.

    Cream 1 1/2 sticks butter; add sugar and egg yolks and beat until fluffy and light.

    Beat egg whites until stiff, then blend into sugar-butter mixture.

    Spoon over cookie crumbs.

    Cover cream with pie filling.

    Cover with whipped cream.

    Chill several hours or overnight before serving.
