Creamy Rice Pudding

Ingredients
- 2 1/4 c. milk
- 1/2 c. rice
- 1/4 c. raisins
- 3 Tbsp. sugar
- 1 pinch salt
- 1 large egg
- 1/8 tsp. nutmeg
- 1/8 tsp. cinnamon
- 1 tsp. vanilla
Directions

1Combine milk, rice, raisins, sugar and salt in saucepan. Bring to boil.

2Reduce heat.

3Cover and simmer, stirring occasionally until rice is tender, about 30 minutes.

4Remove from heat.

5Whisk egg, 2 tablespoons milk, nutmeg and cinnamon in small bowl.

6Stir 1/2 cup rice into yolk mixture until blended, then stir into rest of rice.

7Return to low heat and cook stirring, until most of liquid is absorbed.

8Remove from heat.

9Stir in vanilla.

10Serve warm.
