- 3/4 c. uncooked rice
- 3 c. boiling water
- 1/4 tsp. salt
- 1/2 c. sugar
- 2 Tbsp. butter
- 3 c. milk, scalded
- 3 eggs, slightly beaten
- 1/2 tsp. vanilla
- nutmeg
Directions

1Add rice to rapidly boiling water; add salt and butter.

2Cook and simmer for 15 minutes.

3Add milk and vanilla.

4Simmer 15 minutes longer.

5Thoroughly blend eggs, sugar and vanilla.

6Add a small amount of the hot mixture to egg mixture blend.

7Add to hot mix; cook 5 minutes longer, stirring constantly.

8Pour into heated serving dish.

9Sprinkle with nutmeg.

10Serve while still warm.
