Creamy Spanish Rice

  • 1 Tablespoon Olive Oil
  • 1 clove Garlic, Minced
  • 1 can (15 Oz. Size) Rotel
  • 1 cup Rice
  • 1-1/2 cup Broth
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1 cup Monterey Jack Cheese

Directions

    In a medium sauce pan, heat olive oil. Add garlic and saute until fragrant. Add in Rotel, rice and broth. Season with a pinch of salt and pepper.

    Bring to a boil. Reduce heat and simmer until broth is absorbed and rice is tender, about 18-20 minutes. You may need to add more broth/water as needed.

    Fold in Monterey-Jack cheese, stirring until melted. Adjust seasoning to your taste.
