- 1 Tablespoon Olive Oil
- 1 clove Garlic, Minced
- 1 can (15 Oz. Size) Rotel
- 1 cup Rice
- 1-1/2 cup Broth
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 cup Monterey Jack Cheese
Directions

1In a medium sauce pan, heat olive oil. Add garlic and saute until fragrant. Add in Rotel, rice and broth. Season with a pinch of salt and pepper.

2Bring to a boil. Reduce heat and simmer until broth is absorbed and rice is tender, about 18-20 minutes. You may need to add more broth/water as needed.

3Fold in Monterey-Jack cheese, stirring until melted. Adjust seasoning to your taste.
