- cooking spray
- 12 cup chopped onion
- 2 cups diced potatoes
- 2 12 cups chicken broth
- 10 ounces frozen mixed vegetables, thawed
- 12 cup chopped red bell pepper
- 1 teaspoon chopped fresh thyme
- 18 teaspoon crushed hot pepper flakes
- 1 tablespoon chopped fresh basil
Directions

1Spray saucepan with cooking spray.

2Saute onion for 3 minutes.

3Add potatoes and 2 cups of chicken broth.

4Bring to a boil.

5Reduce heat and simmer until potatoes are tender, about 10 minutes.

6Remove from heat and let cool slightly.

7In a food processor, puree potato mixture until smooth.

8Pour soup back into saucepan.

9Stir in remaining chicken broth, mixed vegetables, bell pepper, thyme and hot pepper flakes.

10Return to a boil.

11Cover and simmer until vegetables are tender, about 8 minutes.

12Serve garnished with basil.
