  • cooking spray
  • 12 cup chopped onion
  • 2 cups diced potatoes
  • 2 12 cups chicken broth
  • 10 ounces frozen mixed vegetables, thawed
  • 12 cup chopped red bell pepper
  • 1 teaspoon chopped fresh thyme
  • 18 teaspoon crushed hot pepper flakes
  • 1 tablespoon chopped fresh basil

Directions

    Spray saucepan with cooking spray.

    Saute onion for 3 minutes.

    Add potatoes and 2 cups of chicken broth.

    Bring to a boil.

    Reduce heat and simmer until potatoes are tender, about 10 minutes.

    Remove from heat and let cool slightly.

    In a food processor, puree potato mixture until smooth.

    Pour soup back into saucepan.

    Stir in remaining chicken broth, mixed vegetables, bell pepper, thyme and hot pepper flakes.
