Creole-Boiled Shrimp

- 2 gal. water
- 1 thin slice lemon
- 1 thin slice onion
- 2 Tbsp. cayenne pepper
- 1/4 c. salt
- 3 lb. large shrimp
Directions

1Combine all ingredients, except shrimp, in large kettle. Bring to a boil and simmer for 5 to 10 minutes to allow flavors to blend.

2Add shrimp and cook for 3 minutes (it won't quite return to boil).

3Remove from heat and add 2 cups of cold water.

4Let stand 5 minutes; drain.

5For less spicy, replace cayenne pepper with pickling spice.
