- 1 1/3 c. Minute rice
- 2 c. grated Cheddar cheese
- 2 1/4 c. (20 oz. can) tomatoes and juice
- 1 tsp. salt
- 1/4 c. fine chopped onion
Directions

1Grease a 1 1/2-quart baking dish.

2Spread about 1/2 of the Minute rice right from the box in an even layer on bottom.

3Cover with 1 cup of grated cheese.

4Add remaining rice.

5Combine tomatoes and juice, salt and onion in saucepan, crushing tomatoes and mixing well. Bring to a boil.

6Pour over layers of rice and cheese.

7Bake, covered, in a moderate oven at 350° for 10 minutes. Remove from oven, uncover and spoon remaining cheese onto rice mixture around edge, leaving center uncovered.

8Bake 5 minutes longer.
