  • 2 tablespoons butter
  • 6 tablespoons cajun seasoning
  • 1 can diced tomatoes with juice
  • 1 cup diced celery small-
  • 1 cup green onion small-diced
  • 1 cup diced yellow onion small-
  • 1 cup fresh tomato small-diced
  • 1 cup red bell pepper small-diced
  • 2 cups white rice uncooked
  • 1 cup water

Directions

    In a large saucepan, saute vegetables and seasoning in butter until slightly soft.

    Add rice and other ingredients and stir well.

    Bring to a boil, then reduce heat to a simmer, cover and cook for 25 to 30 minutes.
