- 2 tablespoons butter
- 6 tablespoons cajun seasoning
- 1 can diced tomatoes with juice
- 1 cup diced celery small-
- 1 cup green onion small-diced
- 1 cup diced yellow onion small-
- 1 cup fresh tomato small-diced
- 1 cup red bell pepper small-diced
- 2 cups white rice uncooked
- 1 cup water
Directions

1In a large saucepan, saute vegetables and seasoning in butter until slightly soft.

2Add rice and other ingredients and stir well.

3Bring to a boil, then reduce heat to a simmer, cover and cook for 25 to 30 minutes.
