  • 14 cup olive oil
  • 1 red bell pepper, stemmed, seeded and chopped
  • 1 green bell pepper, stemmed, seeded and chopped
  • 1 yellow onion, chopped
  • kosher salt
  • black pepper
  • 5 garlic cloves, chopped
  • 1 teaspoon ground cumin
  • 96 ounces tomato sauce
  • 96 ounces water
  • 4 bay leaves

Directions

    heat olive oil in a large saucepan over medium-high heat.

    Add the bell peppers, onion, and salt and pepper to taste and cook, stirring occasionally, until the vegetables are softened.

    Stir in the garlic, oregano, and cumin and cook for about a minute.

    Add the tomato sauce, fill the #10 can with water and pour that in and bring to a boil.

    Reduce the heat and simmer for about 30 minutes, until all the flavors have blended.
