- 1 lb. boneless skinless chicken breasts
- 3/4 c. mashed potato flakes
- 1/2 c. seasoned bread crumbs
- 2 eggs, lightly beaten
- 2 to 3 Tbsp. canola oil
Directions

1Flatten chicken to 1/2-inch thickness, then cut into 1-inch strips. In a bowl, combine potato flakes and bread crumbs. In another bowl, lightly beat eggs. Add a dash of salt and black pepper. Dip chicken in the egg mixture, then in the potato mixture. In a skillet, cook chicken strips in medium-hot oil for 4 to 5 minutes, until golden brown.
