- 3 tablespoons vegetable oil
- 1 1/2 cups all-purpose flour
- 1/4 cup plus 2 tablespoons sugar
- 2 tablespoons baking powder
- 2 teaspoons salt
- 2 1/2 cups cornmeal, preferably stone ground
- 2 cups milk
- 4 large eggs, lightly beaten
- 6 tablespoons unsalted butter, melted
Directions

1Preheat the oven to 425.

2Warm two 9-inch cast-iron skillets over moderate heat.

3Add 1 1/2 tablespoons of the oil to each and heat.

4Meanwhile, in a bowl, sift the flour with the sugar, baking powder and salt.

5Stir in the cornmeal.

6Add the milk and eggs and stir lightly.

7Add the melted butter and stir just until blended.

8Scrape the batter into the hot skillets; the oil should bubble.

9Bake for about 18 minutes, or until the center springs back when gently pressed.

10Transfer to a rack to cool.

11Serve warm.
