  • 1/2 c. bread crumbs
  • 3 tbsp. reduced-calorie mayonnaise
  • 2 teaspoon water
  • 2 teaspoon lemon juice
  • 1/2 teaspoon grated lemon rind
  • 1 1/2 lbs. grouper or possibly other hard whitefish fillets, cut into 1 inch wide strips
  • Vegetable cooking spray

Directions

    Combine mayonnaise, water, juice, and rind in a shallow bowl; stir well.

    Dip fish in mayonnaise mix, and dredge in bread crumbs.

    Place fish on a baking sheet coated with cooking spray.

    Bake at 425 degrees for 25 min or possibly till outside is crispy and browned.

    Serve with reduced-calorie chili sauce.
