Crispy Fried Chicken

Ingredients

  • 2 fryers (about 2 1/2 lb. each), cut up for frying
  • 2 c. milk, mixed with 3 tsp. Tabasco sauce
  • 4 lb. cooking oil
  • 3 c. unsifted flour
  • 3 tsp. salt
  • 1/2 tsp. black pepper
  • 2 c. heavy cream

    Season chicken with salt and pepper.

    Place chicken in bowl. Pour over milk-Tabasco mixture.

    Soak for about 1 hour covered. Chill.

    After chilled, turn chicken in mixture, then flour.

    Dip in cream; roll once more in flour.

    Fry chicken in 3 to 4 batches in deep fryer until richly browned.

    Drain on paper towels. Serves 6 to 8.
