- 1/4 c. butter, melted
- 1 Tbsp. scallions, chopped
- 1 Tbsp. parsley, chopped
- 1/4 tsp. thyme
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 4 large unpeeled potatoes, thinly sliced
- 1 1/2 c. shredded Cheddar cheese (optional)
Directions

1Preheat oven to 425°.

2Lightly grease a 13 x 9 x 2-inch baking dish.

3Combine melted butter with the next 5 ingredients.

4Layer potatoes in baking dish, brushing each layer with butter mixture. Bake for 40 minutes or until tender.

5Sprinkle with cheese and bake for 5 minutes.

6(Bake at 350° for 1 1/2 hours, if desired.) Serve with pork or sausage.
