  • 4 cod fish fillets
  • salt
  • pepper
  • 2 tablespoons mayonnaise
  • 1 lemon
  • 4 tablespoons dill
  • 4 tablespoons chives
  • cucumber
  • lemon

Directions

    Preheat the oven to 200C/Gas 6.

    Put the cod fillets on a board, season well, then place in a non-stick roasting tin.

    Mix together the mayonnaise, lemon juice, zest, and chopped herbs, then spread over the top of the fillets.

    Place in the oven for 20-25 minutes, or until the fish is cooked through.

    Serve with the shredded cucumber salad and lemon wedges.
