Ingredients

  • 1 1/2 c. chopped, cooked eggs, cheese, tuna, veal or pork
  • 1 c. thick white sauce
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg
  • 1 Tbsp. water

Directions

    Grind or chip the material and combine with the white sauce and seasonings.

    Allow to cool and stiffen.

    Shape into balls, cones or rolls, allowing 1 tablespoon for each croquette.

    Roll in crumbs, then dip in egg, slightly beaten and mixed with cold water.

    Roll in crumbs again.

    Fry in deep fat at 375° to 380° until delicately brown (about 1 minute).

    Serve hot.
