- 21/2 C All purpose Flour
- 2 Tsp quick-rising yeast
- 1 Tsp granulated sugar
- 1/2 Tsp salt
- 11/2C warm water
- 1C warm milk
- 2 Tbsp vegetable oil
Directions

1In large bowl, stir tog. flour, yeast, sugar & salt. Stir in water & milk, scraping down side & mixing well. Cover with plastic wrap; let stand in warm place until brush lightly with some of the oil. Grease 3-inch ring moulds & place, 2 in. apart on pan. Scoop batter by scant 1/4 cup into moulds, filling halfway. Cook until surface is dry, 7-10 min.

2Using tongs or wearing oven mitts, remove ring moulds. Flip crumpets & cook just until light golden, about 2 min. Let cool on rack for 5 min. Repeat with remaining batter.

3Make ahead: Store in airtight container for up to 2 days or freeze for up to 2 weeks.
