  • 2 lb. ground pork
  • 1 c. ground shelled shrimp
  • 1 c. carrot slices
  • 1 c. jicama slices
  • 1 c. onion, chopped
  • 1 c. cleaned black fungus slices
  • 1 tsp. black pepper
  • 2 tsp. salt
  • 1 pkg. Vietnamese eggroll wrappers

Directions

    Combine everything in a big bowl and mix thoroughly.

    At end of wrapper, spoon 2 tablespoons of mixture then fold 3 sides together to form a rectangle.

    Roll the wrapper tightly toward pointed end. Seal the end with water.

    Deep fry on medium heat until golden brown.

    Serve with sweet and sour sauce.
