- 2 lb. ground pork
- 1 c. ground shelled shrimp
- 1 c. carrot slices
- 1 c. jicama slices
- 1 c. onion, chopped
- 1 c. cleaned black fungus slices
- 1 tsp. black pepper
- 2 tsp. salt
- 1 pkg. Vietnamese eggroll wrappers
Directions

1Combine everything in a big bowl and mix thoroughly.

2At end of wrapper, spoon 2 tablespoons of mixture then fold 3 sides together to form a rectangle.

3Roll the wrapper tightly toward pointed end. Seal the end with water.

4Deep fry on medium heat until golden brown.

5Serve with sweet and sour sauce.
