  • 5 9/16 tablespoons granulated sugar
  • 9/16 cup icing sugar
  • 4 5/8 tablespoons egg whites

    Preheat oven to 210 degrees Fahrenheit.

    Beat the egg whites and once when they are foamy, add the granulated sugar. When firm, add the icing sugar, by lifting with a spatula. Add 3/4 drops of food coloring if desired. Put the mixture into a fluted pastry bag, and pipe out the meringues on parchment paper or a Silpat silicone cloth from Demarle.

    Bake for 1 hour 15 minutes to 1 hour 30 minutes depending on the size of the meringues.
