  • 1 c. sugar
  • 3 Tbsp. quick cooking tapioca
  • 1 Tbsp. lemon juice
  • 3/4 c. packed brown sugar
  • 1/4 c. all-purpose flour
  • 1 1/2 tsp. ground cinnamon
  • 3/4 tsp. ground ginger
  • 3/4 tsp. ground nutmeg
  • 1/4 c. cold butter
  • 3/4 c. old-fashioned oats
  • 1/2 c. chopped walnuts
  • 1 unbaked pie shell (10-inch)

Directions

    Place oven rack in lowest position and preheat oven to 400°. In a large bowl, toss peaches with sugar, tapioca and lemon juice. Let stand for 20 minutes or until sugar is dissolved.
