Cucumber Sandwiches

Ingredients

  • 2 large cucumbers
  • 2 large carrots
  • 1 large onion
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. mayonnaise
  • 1 pkg. knox gelation
  • 1 loaf bread (frozen)

Directions

    Grate together cucumber, carrots and onion.

    Drain the juice and save.
  3. 3
    Cream together the cream cheese and mayonnaise.

    Heat juice till hot, but not boiling, let it cool in cold water, add pkg. of knox gelation and stir together, let cool again until room temperature.

    Mix cucumber mix, and cream cheese mix into juice mixture.

    Stir well, and then beat mixture until it is fluffy and creamy.

    Refrigerate over night, salt to taste and spread onto frozen bread, trim off crust of bread and cut into finger sandwiches.
