- 1 1/2 teaspoons whole cumin seeds
- 3 tablespoons olive oil
- 1 1/4 teaspoons salt
- 3/4 teaspoon paprika
- 2 pounds russet potatoes, peeled, cut into 1-inch pieces

1Preheat oven to 450F.

2Stir whole cumin seeds in heavy small skillet over medium heat just until fragrant, about 45 seconds.

3Transfer cumin seeds to 13x9x2-inch baking pan.

4Add olive oil, salt and paprika and whisk to blend.

5Add russet potato pieces and toss to coat well.

6Spread out potatoes in single layer in baking pan.

7Roast potatoes until brown and crisp around edges, stirring occasionally, about 35 minutes.

8Serve cumin potatoes hot.
