- 2 c. lowfat milk
- 1/3-1/2 c. sugar
- 4 egg yolks
- 1/8 tsp. salt
- 1 tsp. pure vanilla
- healthy pinch nutmeg
Directions

1Have ready 5 individual serving custard c.. Place in a shallow baking pan filled with tepid water.

2Stir sugar and salt into lowfat milk.

3Over very low heat, bring lowfat milk to the scalding point till it just begins to create a thin skin.

4Don't boil lowfat milk.

5Beat Large eggs slightly; add in a small amount of warm lowfat milk to the Large eggs, then stir the Large eggs back into the lowfat milk, whisking continuously.

6Remove from heat.

7Bake at 350F degrees till a knife inserted in center comes out nearly clean.

8When cold, cover each c. with a thin coating of caramel.

9Just before serving, add in a Tbsp.
