  • 5/8 pound curd cheese
  • 1 7/8 cups brown sugar
  • 4 eggs
  • 7 tablespoons butter softened
  • 4 tablespoons all purpose flour
  • 1 teaspoon ground cinnamon

    Preheat oven to 180°C (approximately 350°F).

    Beat curd cheese with an electric mixer or food processor until thin and spreadable.

    Add sugar and continue to beat.

    Add eggs one by one, mixing well after each.

    Add softened butter and mix well.

    Add sifted flour and cinnamon and mix again.

    Pour batter into a greased and floured loaf pan.

    Bake in preheated oven for 35-40 minutes.

    Loaf is done when toothpick inserted in middle comes out clean.
