- 1 cup butter
- 1 cup sugar
- 1 1/2 teaspoons grated lemon rind
- 1 teaspoon lemon juice
- 2 eggs
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1 1/2 cups currants
Directions

1Preheat oven to 350 degrees

2Prepare 2 cookie sheets.

3Beat the butter and sugar together until they are light and creamy.

4Beat in the rind, juice and eggs.

5Stir the flour and salt together and fold into the butter mixture.

6Add the currants.

7Drop by tablespoons onto cookie sheets.

8Bake for 14 minutes, or until lightly golden brown around the rims.

9Cool on a cookie rack.

10Store in airtight tins.
