  • 1 cup butter
  • 1 cup sugar
  • 1 1/2 teaspoons grated lemon rind
  • 1 teaspoon lemon juice
  • 2 eggs
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 1/2 cups currants

    Preheat oven to 350 degrees

    Prepare 2 cookie sheets.

    Beat the butter and sugar together until they are light and creamy.

    Beat in the rind, juice and eggs.

    Stir the flour and salt together and fold into the butter mixture.

    Add the currants.

    Drop by tablespoons onto cookie sheets.

    Bake for 14 minutes, or until lightly golden brown around the rims.
