Ingredients

  • 2 c. cake flour
  • 2 T sugar
  • 1 T baking powder
  • 1/2 t salt
  • 1/4 c. chilled unsalted butter cut into pieces
  • 1 c. chilled whipping cream
  • 1/3 c. dried currants
  • Powdered sugar

Directions

    1) Stir first 4 ingredients in large bowl.

    2) Add butter, cut in by hand or by pulsing processor.

    3) Add cream and currants, stir until moist clumps form.

    4) Gather dough, transfer to floured working surface.

    5) Flatten into 3/4 in thick round.

    6) Cut out rounds with 2 in cutter; gather scraps reform and cut out additional rounds.

    7) Preheat oven to 425.

    8) Chilld rounds 20 min. covered on sheet.

    9) Bake uncovered until golden, about 10 min.

    10) Cool 5 min. and dust with powdered sugar. Best warm.
