Ingredients

  • 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 2 cloves garlic, minced
  • 2 Tbsp. ginger, grated
  • 2 Tbsp. oil
  • 1 tsp. curry powder
  • 1 can (19 fl oz / 540 mL) chickpeas (garbanzo beans), drained and rinsed
  • 1 can (28 fl oz / 798 mL) diced tomatoes, drained King Sooper's 1 lb For $0.99 thru 02/09
  • 1/2 cup water
  • 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
  • 1/4 cup finley chopped mint leaves

Directions

    Cook onion, garlic and ginger in oil in large frypan for 2-5 minutes or until onion has softened.

    Stir IN curry powder, cook for 1 minute, stirring constantly.

    Add chickpeas, tomatoes, water and lemon juice.

    Bring to boil, reduce heat and simmer 15 minutes.

    Add mint just before serving.

    Serve with prepared basmati rice or couscous.
