Curried Cold Rice

  • 4 c. cooked white rice, cooled
  • 1/2 c. chopped scallions
  • 1/2 c. each: chopped green and red pepper
  • 8 oz. pkg. uncooked, defrosted peas
  • 2 cloves crushed garlic
  • 1 tsp. curry
  • 1/4 c. oil
  • 3/4 c. vinegar
  • 1/2 tsp. sugar
  • salt and pepper to taste

Directions

    Combine rice, scallions, peppers and peas in large bowl.

    In cruet, combine garlic, curry, oil, vinegar and sugar.

    Shake well and pour over rice just before you're ready to serve.

    Coat well and salt and pepper.
