- 4 c. cooked white rice, cooled
- 1/2 c. chopped scallions
- 1/2 c. each: chopped green and red pepper
- 8 oz. pkg. uncooked, defrosted peas
- 2 cloves crushed garlic
- 1 tsp. curry
- 1/4 c. oil
- 3/4 c. vinegar
- 1/2 tsp. sugar
- salt and pepper to taste
Directions

1Combine rice, scallions, peppers and peas in large bowl.

2In cruet, combine garlic, curry, oil, vinegar and sugar.

3Shake well and pour over rice just before you're ready to serve.

4Coat well and salt and pepper.
