- 1/2 c. all-purpose flour
- 1/4 c. plus 2 Tbsp. cornmeal
- 1/2 tsp. salt
- 3/4 tsp. curry powder
- 1/2 tsp. paprika
- 1 egg
- 1 1/2 Tbsp. milk
- 6 chicken breast halves
- vegetable oil
Directions

1Combine flour, cornmeal, salt, curry powder and paprika; mix well and set aside.

2Combine the egg and milk in a shallow bowl and beat until blended. Dip chicken in the egg mixture and dredge in the flour mixture.

3Fry chicken in hot oil (350°) 10 to 15 minutes on each side; or you may bake this in a deep dish in the oven at 350° for 20 to 30 minutes.
