Curried Pecans

- 1 lb. pecan halves
- 1/4 c. peanut oil
- 1/4 lb. butter
- 2 Tbsp. brown sugar
- 2 Tbsp. curry powder
- 1 Tbsp. ginger
- salt to taste, about 2 tsp.
- 1 Tbsp. chutney
Directions

1Preheat oven to 350°.

2Place the pecans on a baking sheet and toast in the oven for about 10 minutes.

3Do not allow the pecans to brown.

4Remove the nuts from the oven but leave the oven turned on.

5Melt the butter and oil in a large skillet.

6Add the brown sugar, salt, curry and ginger.

7Blend well.

8Add the pecans and stir with a wooden spoon until well coated.

9Add the chutney and mix well.

10Place the pecan mixture on paper towels on the baking sheet and place in the oven.

11Turn the heat off.

12Let the pecans dry in the oven about 10 minutes.

13Remove from the oven, salt lightly and let cool completely.

14Store in an airtight container.
