- 1 apple, peeled and chopped
- 1 tablespoon curry powder
- 1 teaspoon minced garlic
- 2 teaspoons olive oil
- Vegetable cooking spray
- 2 cups fat-free reduced-sodium chicken broth
- 1/4 teaspoon salt
- 1/4 cup golden raisins
- 1/4 cup sliced green onions
- 2 tablespoons slivered almonds, toasted
Directions

1Saute uncooked rice and next 4 ingredients in hot oil in a large saucepan coated with cooking spray 5 minutes. (Do not brown.) Stir in broth and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in raisins, green onions, and toasted almonds.
