  • vegetable oil cooking spray
  • 3/4 c. shredded carrots
  • 1/2 c. diced celery
  • 1/8 tsp. pepper
  • 1 tsp. butter
  • 1/2 c. bay scallops
  • 2 tsp. Chablis wine
  • 1/4 to 1/2 tsp. curry powder
  • 1/4 tsp. salt
  • chopped chives (optional for garnish)

Directions

    Coat a medium nonstick skillet with vegetable oil.

    Place over medium-high heat until hot.

    Add next 3 ingredients; saute 1 1/2 to 2 minutes or until crisp-tender.

    Remove from heat and set aside. Keep warm.
