- 4 eggs or 8 egg yolks
- 2/3 c. sugar
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 2 2/3 c. scalding hot milk
- 1 tsp. vanilla
- 1 (9-inch) unbaked crust
Directions

1Heat oven to 450°.

2Beat egg slightly.

3Then beat in remaining ingredients.

4Pour into crust.

5Bake 15 minutes, then reduce heat to 350°.

6Bake 10 to 15 minutes more.

7Insert knife 1-inch from side of filling to test.

8If knife comes out clean, custard is done.

9Center will be soft, but will set up as custard cools. Overcooking will make custard watery when cut.
