Ingredients: butter for pan; 3 med juicy sweet apples such as gala or Fuji; 1/2 c flour; 1 t baking powser; 2 eggs; 1/3 c granulated sugar; pinch of salt; 2 t vanilla extract; 2TB unsalted butter, melted and cool but still liquid; confectioners sugar (for sprinkling); 6 TB whole milk

3 med juicy sweet apples such as gala or Fuji
1/2 c flour
1 t baking powser
2 eggs
1/3 c granulated sugar
pinch of salt
2 t vanilla extract
2TB unsalted butter, melted and cool but still liquid
confectioners sugar (for sprinkling)
6 TB whole milk

1. Set oven at 400

butter an 8 inch square baking pan and line bottom with parchment

2. peel apples, slice them thinly

3.in bowl, whisk the flour and baking powder to blend

4. in large bowl, whisk eggs, granulated sugar and salt for 2 minutes. Whisk in vanilla, then the milk and melted butter. Add the flour and whisk until the batter is smooth. Gently fold in apples until each apple is coated with batter.

5. scrape the batter into pan

6. bake cake for 40-50 minutes or until is golden and uniformly puffed. Cut into squares and dust with sugar
