  • 2-1/4 cup cake flour
  • 1/4 cup granulated sugar replacement
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup cocoa
  • 2/3 cup vegetable shortening, softened
  • 1 cup water
  • 2 tsp. vanilla extract
  • 3 eggs

Directions

    Sift flour, sugar replacement, baking soda, salt and cocoa together into large mixing bowl.

    Add shortening, 1/2 c. of the water and vanilla extract; beat until just moistened.

    Add remaining water and eggs.

    Beatuntil slightly thickened.

    Pour into well-greased and floured 13x9-inch baking pan.

    Bake at 350F for 40 to 50 minutes or until cake tests done.
