Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 onion
  • 1 tablespoon curry powder
  • 1 tablespoon cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 minced garlic cloves
  • 1 teaspoon ginger
  • 2 tablespoons ketchup
  • 1 cup red lentil, washed
  • 4 cups water

Directions

    On medium-high heat, saute onions in oil until soft (about 4 minutes).

    Add everything except the lentils and water. Cook out bitterness of dried spices for 1-2 minutes.

    Add lentils and water.

    Simmer on medium heat for 25 minutes, stirring occasionally.

    Enjoy with rice or on its' own.
