Ingredients

  • 3 to 4 lb. ground chuck
  • 2 onions, chopped
  • 3 tsp. chili powder per lb. ground chuck
  • 1/2 tsp. cayenne (add more for hotter chili)
  • 1 small can tomato sauce
  • 2 (16 oz.) cans hot chili beans
  • cracker meal
  • salt and pepper to taste

Directions

    Fry meat in skillet until done; drain well.

    Put meat, chili powder, cayenne, salt and pepper in large pot.

    Fill with water. Boil 3 to 4 hours, adding water when needed.

    Add onions.

    Cook until tender.

    Add tomato sauce; stir well.

    Spoon off grease that is floating on top.

    Add a little cracker meal for grease you cannot remove.

    This helps thicken chili.

    Add 2 more teaspoons chili powder.

    Add salt and pepper to taste.

    Add beans.

    The longer the meat and chili powder boil, the better the chili taste.
