- 3 to 4 lb. ground chuck
- 2 onions, chopped
- 3 tsp. chili powder per lb. ground chuck
- 1/2 tsp. cayenne (add more for hotter chili)
- 1 small can tomato sauce
- 2 (16 oz.) cans hot chili beans
- cracker meal
- salt and pepper to taste
Directions

1Fry meat in skillet until done; drain well.

2Put meat, chili powder, cayenne, salt and pepper in large pot.

3Fill with water. Boil 3 to 4 hours, adding water when needed.

4Add onions.

5Cook until tender.

6Add tomato sauce; stir well.

7Spoon off grease that is floating on top.

8Add a little cracker meal for grease you cannot remove.

9This helps thicken chili.

10Add 2 more teaspoons chili powder.

11Add salt and pepper to taste.

12Add beans.

13The longer the meat and chili powder boil, the better the chili taste.
